Quick and Easy Last-Minute Parmesan Chicken

Are you looking for an easy yet extremely delicious recipe for dinner? For a get-together? For a potluck? Or are you getting ready to leave on a trip and want to have a great, simple, easy, homemade meal?

I’ll share with you one of the best dishes I’ve ever stumbled upon. Do you like Parmesan cheese? How about mayonnaise? And chicken?

You are going to love this recipe.

This is a simple take-off of the recipe on the Hellman’s mayonnaise bottle. But my version is completely carb-free and if you are like my family, you already have all these ingredients on hand.

Once you’ve gathered all your ingredients and the chicken is thawed the preparation is extremely easy.

The Recipe:

First, take a small to medium size bowl and put the measured-out mayonnaise and Parmesan cheese into it. Mix until well combined.

Set up to make Parmesan Chicken. Parmesan, mayo.

Next, lay out the chicken breast/thighs on an aluminum-covered (cookie) sheet pan.

Take a spoon or a basting brush. And spread the mixture onto the chicken. Don’t worry about being perfect but do try to cover all of the chicken – that’ll just ensure every bite is delicious 🙂

If you’re like me and you like Parmesan cheese go ahead and add a little more on top of each chicken. This will help it brown up in the oven.

Viola! That’s all there is to it. Now stick the chicken into the oven at 375 degrees for about 20-30 minutes and you will have one of the best night-before-travel meals you’ve ever had.

O.k., so honestly I just eyeball the ingredients these days (and I am rarely an eyeballer of ingredients) but the approximation of amounts is just that. You can always test the mayo/Parmesan mixture before putting it on the chicken but you really can’t go wrong unless you put way too much cheese. It gets rich fast in the mixture. And if you need to make more, go ahead and make more. If you’ve made too much, just use the remaining in another dish or sandwich!

And there you have it. A delicious and super easy chicken dish everyone will love.

Parmesan Chicken

An easy and delicious family dinner.

  • 13 x 9 baking dish
  • 1-2 cups mayonnaise
  • 1-2 tbsps parmesan cheese
  • 6-8 chicken breasts/thighs
  • 1-2 tbsps additional parmesan cheese for topping
  1. Preheat oven to 375 degrees.

  2. Mix mayonnaise and parmesan in a small/medium bowl until well combined.

  3. Place chicken on a lined cookie sheet.

  4. Spread mayonnaise mixture on top and sides of chicken until well coated.

  5. Optional – sprinkle the additional parmesan cheese on the tops.

  6. Place chicken into the oven, middle rack for about 20 to 25 minutes or until fully cooked throug and the tops are golden brown.

  7. Enjoy!
