How To Make The Best Fried Eggplant Dish Ever
So, I’m assuming either you’re reading this because you already love eggplant… or…. you are thinking about trying a new dish!
Well, either way I’ve got a great healthy and delicious eggplant recipe for you to try. And it’s simple too!
But first, just in case you’re not sold, let’s look at some of the awesome benefits of eggplant.
Benefits
∼Contains antioxidants which can help in fighting cancer and heart disease.
∼High in fiber.
–Helps slow the absorption of sugar into the body, which in turn will help keep blood sugar levels lower.
–Helps you feel full longer (may just help with weight loss!)
∼High in vitamins and minerals like C, K, Folate and Potassium.
These should be a good reason to at least try this recipe once! So let’s get started 🙂
(Full disclosure – frying foods is not necessarily healthy, so use less oil to help the recipe be that much healthier. Or try it bake!)
Fried Eggplant
First, this recipe calls for medium to large eggplants. These in the picture are about 8-10 inches long.
After placing them on a cookie sheet (we put aluminum foil under them to help keep the cookie sheet clean :)) you’ll prick them with a fork – like when you’re making a baked potato.
Bake for 45-60 minutes on 350°.
They should be soft at this point.
Once they have cooled enough to handle, peel the skins off.
Then simply mash the eggplant into a flat piece.
The best fall dish to add to your lineup – Fried Eggplant.
Once it’s mashed you’ll do an easy egg coating with them.
You’ll want the oil on medium heat.
Place the egg battered dipped eggplants in the oil and let them cook until they’re browned.
And there you have it!!!
I know it may not sound like a lot but I’ve found, sometimes the simplest recipes are the best 🙂

- Combine the eggs, garlic, salt and black pepper in a medium size bowl.
- Add the oil to your frying pan and heat to medium.
- Place the eggplants in the oil and let them cook until they're browned.
This looks delicious, I love eggplant so I’ll have to give this recipe a go!

I love eggplants. I grilled them and make a salad out of it. Sometimes fry them with eggs for breakfast. It’s delicious and easy to cook too.

This is a Filipino recipe. I make this all the time. We normally dip the eggplant in vinegar and soy sauce mixture. This is perfect with white rice. 🙂
